This is my starter, it has no name.
All my loaves are made from this starter, which is 40% white flour and 60% wholemeal or rye flour (depending on how I feel on the day). It is a very nice starter, I stole it from my mother, thank you mother.
It is used in the final cold proof, this is what makes the lovely slug-like pattern
